Kellan's class at daycare spent the month of August learning about "Fun in the Sun", which includes picnics, so I've been wanting to surprise Kellan and Michael with a Friday afternoon picnic in the park! So a couple days ago I made some paninis, coucous, and broccoli slaw...packed it all in a cooler....and rounded up a blanket. It was fun and yummy, although Kellan was so distracted by the passing bikes, running squirrels and other lunchtime picnickers that he spent most of his time pointing things out to us, rather than eating!

Yum! I'd been dying to try this recipe, and finally got a chance to do so during our week in McCall: grilled sweet potatoes with apples! Super delicious and super easy. Just peel and slice some sweet taters and a golden delicious apple or two, put slices on a big piece of foil, sprinkle with olive oil, nutmeg and allspice. Then wrap the foil into a bag-like pouch and pop on the grill! Forty minutes later, you have a delicious and easy side dish. I also made a yummy pasta with sundried tomatoes, spinach, and crimini mushrooms. With some nice wine -- and a pretty McCall sunset -- it all made for a lovely outdoor dinner! Yikes! During our vacation, the wine bottle opener fell apart (the corkscrew came right out), and we were in need of some wine with dinner. I asked my ever-so-ingenious husband if he had any ideas on how to get the bottle open. And sure enough, he did. At this point, Michael has realized there is no way to bring the cork out of the bottle. If he were to reverse the drill, it would just bring the corkscrew back out! Time for Plan B... This oughta do it... Ah ha! Great success!!! Kellan is a singer! One day, his babbling suddenly became a song. I'm not exactly sure what the song is about (it's an original, of course), but it goes something like: "Mino, mino...." Well, listen for yourself. Here you see a photo of one of our greatest vacation adventures! We wanted to take a bike ride and didn't want to leave Enzo behind. So Michael MacGyver'ed a device that would allow our "pup pup" to come along, yet keep him on a short leash, so to speak. We had so much fun, we took another short 3 1/2 mile bike ride during our last full day in McCall. Apparently, that was a little too much for poor Enzo! He was so sore the next day, Michael had to carry him to the car for our trip home to Boise. (And considering Enzo is 85 pounds' worth of dog, that's no small feat.) I think Michael will have to MacGyver a little protection for Enzo's paws next time around... I didn't realize until the week before I left for McCall that there is actually a day dedicated to the celebration of the s'more. I learned of this incredible holiday thanks to Meg -- she documented her celebration of National S'more Day on her blog. Reading about the gourmet versions of the s'mores that she savored had me primed and pumped to make my own delicacy. And boy, did I! Note: You may notice the massive amount of 'mallow above. I still recommend the Huckleberry S'more technique outlined in the recipe above...we tried one big marshmallow at first, but realized the large size overwhelms the berries. Trust me: stick with the mini marshmallows. Get ready for a whole new world of Reagan Rendezvous blogging -- we can now quickly and easily shoot video clips with our new still camera. (Uploading them is another story, but I think we've simplified the process somewhat.) |
